Special evening of French cuisine

French restaurant L’ensoleiller is located by the lakeside of Sakuraga-ike, a symbol of the majestic nature of Nanto. The star features of owner-chef Atsushi Takami’s French cuisine are the fresh seasonal vegetables produced by the community’s own local farmers. Chef Takami highlights organic and naturally-farmed vegetables grown in the red soil of Tatenogahara, where L’ensoleiller is located, as the main components for every meal, carefully and expertly combining them with fresh ingredients such as seafood from Himi, Shinminato, and Noto, as well as pork and beef from Toyama, to produce high quality dishes to be served before guests. Chef Takami’s cuisine was awarded one Michelin star and the Green Star in the Michelin Guide Hokuriku 2021 Special Edition. Enjoy the authentic French cuisine of L’ensoleiller.
南砺の大自然、桜ヶ池の畔にあるフレンチレストラン「ランソレイエ」。オーナーシェフ高見敦司氏のフランス料理の主役は、地元の生産者さんが作る滋味に富んだ野菜たち。ランソレイエのある立野ヶ原の赤土で育った有機野菜や自然農法の野菜をメインに、氷見や新湊、能登から届く魚貝類、富山産の豚や牛など新鮮な食材が、高見シェフの手によって丁寧に、上質な料理に昇華されテーブルに並びます。富山・石川版ミシュランガイド(2016)で1つ星を獲得したランソレイエの本格的フランス料理をご堪能ください。

5月からリニューアルしたディナープランでは、オーナーシェフ高見氏が厳選した料理に合う4種のフランス産ワインをペアリングセットにしてご用意致します。初夏(5〜6月)は、南仏プロヴァンス、ラングドック産のワインをご用意致します。地中海の暖かい陽射しをいっぱいに浴びて育ったぶどうのワインが、初夏の南砺・富山産の食材を使った料理の魅力を引き立たせます。

アミューズ
「新じゃがいもで作ったヴィシソワーズの再構築」

新じゃがいものピューレに、野菜だけで作ったコンソメジュレを添えて。ピューレとジュレを混ぜると新しい触感の香り高いヴィシソワーズが味わえます。瑞々しい新じゃがいもの素材に合わせて、すっきりとしたプロヴァンス産のシャルドネ白ワインをご用意致します。

メイン
「黒毛和牛のロースト 葡萄酢ソース添え」

立山の大自然で育った柏ファームの黒毛和牛を使ったメイン料理。ローストしたビーフには城端のタカクワファームの葡萄酢を使った甘酸っぱいソースを添えて。ワインは、フルーティーなソースに合う、ラングドック産の果実味とパワフルな味を兼ね備えた赤ワインをご用意致します。

※「ノンアルコール」をご希望の方には、フランスのワインを作る品種で作った葡萄ジュースなどを組み合わせたペアリングセット(4種)のご用意もございます。

※ご宿泊棟からレストランまでは、専用車にて往復送迎サービスをご用意致しますので、運転のご心配なく、お酒と料理をゆったりお楽しみいただけます。

  • Available period: January 2022- (excluded days: Tuesday and Wednesday)
  • Time: Approx. 18:00 to 21:00 (about 3 hours)
    *At 18:00, a private car will pick you up at your room.
  • Fees: Please check the rates for your preferred stay on the Bed and Craft official reservation page.
  • Conditions: Adult customers (*Please contact us if you have children with you)
  • Number of participants: 2 to 7 people max
  • Reservation deadline: 5 days in advance

Notes


  • If the restaurant is full, we may not be able to accept your reservation.
  • If you have any food allergies, please be sure to contact us at least 5 days in advance.
  • If you would like a non-alcoholic pairing set (4 types), please fill in the “Requests / Questions” section of the reservation site. There is no change in the price.
  • Alcohol is only available to customers over the age of 20.
  • Beverages other than the 4 pairing wines will be charged separately.
  • The above menu is an example course. Food and wine will change depending on the season.
  • The end time may vary from group to group depending on the pace of the meal.
  • Please note that the following cancellation fee will be charged if you cancel your reservation.

  • After 17:00, 3 days before reservation: 50% of the price
  • After 17:00, on the day before reservation / On the day / No contact: 100% of the price
